There is no healthiest sparkling water

and vegetables

  • 600g fillet of beef
  • 1 courgette
  • 1 red pepper
  • A handful of raisins
  • 4 dried apricots
  • Half a glass of sweet wine
  • 1 onion
  • 2 carrots
  • 2 garlic cloves
  • 1 tbsp finely chopped parsley
  • 50g cashew nuts (preferably fried)
  • Extra Virgin Olive Oil
  • Salt and pepper

Soak the dried apricots and raisins in water for them to soften up. We recommend you do this separately.

Peel and finely chop the garlic cloves, the onion and carrots. Finely slice the beef and season it. Next, wash the courgette and the pepper and cut into thin strips.

Heat a pan, preferably a deep one, with a teaspoon of oil, and add the garlic, onion and a pinch of salt. Sauté the onion until golden and then add the beef, raisins and apricots. Sauté the beef until golden and add the sweet wine and leave to reduce. Remove from the heat.

In another pan, sauté the courgette, carrots and pepper, and season to taste. Once cooked, add it to the beef. Add parsley, cashew nuts and sauté for two minutes.

Serve hot.
